Our client just outside Birmingham are looking for a Head Pastry Chef to head their brigade of 7-10 Pastry Chefs. This fantastic opportunity has just arisen at this exciting Convention Hotel near to the National Exhibition Centre. The newly refurbished hotel has over 700 bedrooms and 33 meeting rooms, including the Monarch Suite which can accommodate up to 2000 people. This contemporary hotel and conference centre is a popular Convention and Exhibition destination and is easily accessible by road, rail and air making it an excellent choice for both national and international events. The hotel has many kitchens providing catering throughout the hotel including those for three restaurants with banqueting facilities and Pastry where a wide variety of foods and menus are produced on a daily basis. As Pastry Chef you would be responsible for running the Pastry Kitchen with the assistance of a brigade of 10 Chefs. This is a hands-on role and your key responsibilities will include: Supervision of staff and management of the day to day working environment within the pastry kitchen. To Ensure consistent standards of production and delivery of all pastry food items. You will also comply with the Food Safety Act, recording of all samples, temperature checks - both equipment and food. As Head Pastry Chef you will assist the Executive Head Chef with supervision of employees, menu planning, and related production activities, and ensure proper staffing for maximum productivity and high standards of quality. You will assist in controlling food and payroll costs to achieve maximum profitability. You will also attend to day-to-day problems and needs concerning equipment and food supplies.
